Homemade Cinnamon-Honey Graham Crackers

These homemade cinnamon-honey graham crackers from A Cup of Sugar...A Pinch of Salt a bursting with flavor compared to the boxed kind.  These crackers are great on their own (especially when dipped in chocolate) or perfect for making s'mores or a pie crust.  It is always fun to make snacks that you are typically used to buying and they almost always come out tasting better!

 

Ingredients:

For the graham crackers:
2 cups unbleached all-purpose flour, plus more for rolling
1/2 cup whole-wheat flour
3/4 teaspoon kosher salt
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
8 ounces (2 sticks) unsalted butter, cut into small pieces, at room temperature
1/4 cup packed dark brown sugar
1/4 cup granulated sugar
1/4 cup honey

For the chocolate ganache:
1/3 cup honey
2 tablespoons heavy cream
1/2 vanilla bean, split and scraped, pod reserved
4 ounces bittersweet chocolate, finely chopped
1 ounce (2 tablespoons) unsalted butter, cut into pieces and softened
