5-Minute Fried Rice for One

Cooking for one tonight? If you have cooked rice on hand, this quick and easy recipe for fried rice is going to make you happy (and it’s way healthier than takeout). Great for a quick solo lunch or dinner, this veggie-loaded fried rice recipe from Total Noms would be great as leftovers, too, if you double it.

Five-Minute Fried Rice for One

Ingredients:

    1 tbsp canola oil, coconut oil, or other vegetable oil
    ½ cup kale leaves, chopped
    5-6 cherry tomatoes, halved
    2 stalks celery, sliced into C’s
    ¼ cup frozen corn
    1 clove garlic, minced
    1 cup cooked rice (brown or white)
    1 egg, cracked into a small bowl and lightly whisked with a fork
    2 tbsp soy sauce (can be low-sodium)
    1 tsp sesame oil
    scallions, sliced thinly on the bias (for garnish)
