How to Make Breakfast Burritos To Go

April 23, 2015

Breakfast burritos are an easy meal for you to eat while on the run.  You may consider breakfast burritos to a meal that is time consuming to prepare or purchased from a fast food restaurant, but that is simply not the case.  The wonderful thing about breakfast burritos is how versatile they can be.  You can essentially throw anything into a tortilla with some eggs and cheese and call it a day.  For this reason, breakfast burritos are not only delicious but inexpensive.

This dish is a great way to use up leftovers or any ingredient on their last leg.   The recipe is simple, scramble a dozen eggs with your favorite protein and veggies and them load them up into a tortilla.  Before rolling, add some cheese (I like something that melts smoothly like cheddar or Monterey jack). Once your breakfast burrito is wrapped nice and tight in parchment paper, you can store them in the fridge or freezer.  All they need is 30 seconds in the microwave and they are ready to eat. With a little work the night before, eating a homemade breakfast burrito will be as easy as grabbing a granola bar or ordering at the drive-thru.

Ingredients to Consider:

Fresh or sauteed spinach
