Miracle Dinners: One Pot Mac n' Cheese

One pot meals are my saving grace during this busy time of year. We reserve most of our biggest and glamorous meals for the holidays so scattering some simple dinners in between helps keep things balanced. This one pot mac n cheese is absolutely amazing. All the ingredients go in a pot and the dish is ready to go in 20 minutes. You can also add other ingredients to this dish like pulled pork, chicken sausage, peas, or cauliflower to make it heartier.

One Pot Mac n' Cheese

Ingredients:

1/2 lb macaroni
1 garlic clove, finely minced
1 cup shredded sharp cheddar cheese
1/2 cup cream cheese
1 cup heavy cream
2 cups water
1/4 tsp freshly grated black pepper
1/8 tsp grated nutmeg
pinch of red pepper flakes
salt to taste

Directions:

Step 1: Heat a large saucepan over medium high heat and add macaroni, garlic, cheddar cheese, cream cheese, cream and water. Mix the ingredients together until well combined. Bring the mixture to a boil and reduce to a simmer. Cover a cook for 7 to 10 minutes to until the pasta is cooked to al dente and the cheese has melted. Season the macaroni with nutmeg, salt, pepper and red pepper flakes. Turn off the heat and allow the pasta to sit and sauce to thicken. Serve hot.
