Curried Tofu For Two

Ingredients

1 teaspoon minced garlic
2 green onions chopped full
1 tablespoon ketchup
2 teaspoons garam masala
Lemon juice to taste
1 tablespoon of margarine

Preparation

In a small sauce pan add 2 cups of water and boil. Once boiled, add about 1 cup of rice. Cover and allow to sit checking it and stirring every now and then, until soft.

In a frying pan add one tbsp of corn oil (or any vegetable oil) and a dollop of soy sauce. Set to medium heat.

Cut the brick of firm tofu in half and store the rest for later. Take the remaining half, dry off with paper towel and cut it into thin strips of about 1cm pieces then add to frying pan. Flip the tofu after a few min and do each side at least twice until it is nice and brown and less flimsy. Then set aside on a plate.

Add all of the ingredients for the curry sauce in a small bowl. Heat in microwave until margarine melts.( be careful not to leave it in too long 10-15 sec max. Stir and add Water until it is less a paste and more a sauce. then place the sauce and tofu in a pan for about 5 min until the tofu absorbs a bit of the sauce.

Drain your rice, run it under some water if you want to get ride of some of the starch left on it.

Distribute the rice on two plates in the centre. Take the empty sauce pan and add the tofu and the curry sauce to it. Place over medium heat until hot.(cut the pieces of tofu into smaller chunks).

Place the sauce and tofu over the rice and serve immediately.
