Oriental Carrots
Ingredients
1 pound bag carrots
1 bunch celery
Diced ginger root, about 1 tbsp., more or less, depending on taste
2 tablespoons low calorie butter
Pinch sugar
Preparation

Slice carrots diagonally. Slice celery diagonally. Peel and chop ginger root. Saute ginger root in butter on low heat until slightly browned. Add sliced carrots and celery, about 3 tablespoons of water and cover about 5 minutes. While continuing to cook on low. Remove lid sprinkle with sugar and stir frequently while cooking until vegetables are tender. Add more butter, if needed.
