My favourite way is as part of a cheese platter, along with some hard cheese (sharp cheddar, emmenthal, etc) as well as some semi-soft cheese (brie, camembert).
It is also delicious spread on bruschetta and melted under the grill.
Another use is as part of a salad - roast beetroot and serve atop a bed of greens along with the goats cheese and perhaps some caramelized onions. I have also used goats cheese in an aubergine tart - see my added recipes for more details.
