Yes, mint leaves can be frozen to preserve freshness. You will need water and an ice cube tray. Take the mint leaves and place two or three leaves in each section of the ice cube tray. Cover the leaves with water and freeze them. This will keep the mint leaves fresh and keep them from being feezer burnt. To thaw them, just remove the amount of cubes of mint for the desired use and let them thaw.
