The consistency of pancetta and bacon grease are the same but the flavors are completely different. Pancetta is typically salt cured with herbs for several months and is seldom smoked. They are both delicious, just in different ways. If a recipe specifically asks for pancetta, be cautious in substituting bacon. The smokiness of most bacon may overwhelm the other ingredients.

No, bacon and pancetta are two different products. Therfore, they render two different types of grease. Pancetta grease and bacon grease. There are so many types of bacon, too many to list. Pancetta is cured differently and has a delicate flavor that is'nt as smoky as regular bacon.

Bacon and pancetta are basically the same except bacon is cured and smoked where as pancetta is only cured.
