Question: Is The Cupcake Recipe Correct?

March 8, 2010
About Guinness Beer Cupcakes... The recipe calls for the following beer: 1 ounce bottle beer *at room temp* (I used an 11.2 bottle of Guinness Draught) It reads as though someone used the whole bottle, at 11.2 (oz?)... If so, it looks like a typo, calling for only '1 ounce bottle beer' -- perhaps a 10-oz bottle? I don't use beer, so that is just a guess. Please look over the recipe and confirm the amount. One ounce seems dreadfully small and nearly insignificant in terms of it being the liquid for these cupcakes.

Sometime make yourself beer pancakes. Instead of using water in your pancake batter, use beer. They are really good!!

Beer is a great baking ingredient because of the yeast used in it's brewing...try the recipe.

Use a lighter beer...like a lager or ipa

I really appreciate your total answer, Mr. Stimpson. I too felt that an entire cupcake recipe would require more liquid. On the other hand, I really don't want bitter-tasting cupcakes, so I thank you for being so explicit regarding that aspect, as well. I think I will pass that recipe by.

Who wrote the recipe...send them a note and ask. My opinion, based on my life as a professional chef, is go with the bottle of beer. I would guarantee you its a typo...especially with the side comment regarding using an 11.2 oz bottle of Guinness. Man, Guinness will give those cupcakes a pretty bitter taste. If your bottle of beer seems to make the batter too thin add a bit more flour to balance it out. 1 ounce of liquid would be good for about 2 cupcakes I'm thinking.
