If the cake is unfrosted, it should be safe stored in an airtight container or covered tightly on your counter for up to a week. If the cake is frosted, especially with a frosting containing cream cheese or whipped cream, it is best to refrigerate within two hours of coming to room temperature, as food scientists have found that perishable foods which spend over two hours at room temperature can have enough harmful bacteria growth to make you sick.
