Meats cooked for long periods of time in an oven or crock pot have a tendency to flake, fall apart, and become dry. Cooking string and butcher's twine hold the meat together during preparation and cooking. There are two results. First, the string mechanically prevents the meat from flaking and the cooked meat is more attractive. Second, the string holds the meat together and the meat stays moister while cooking and thus the cooked meat is more flavorful.
