Tamales are a masa (corn) dough that is steamed in corn husks and sometimes banana leaves, usually with a filling of chicken or pork or a vegetarian combination and a sauce that is typically a verde (green) sauce of roasted tomatillos, roasted peppers, cilantro, garlic & lime or a red (roja) chili sauce of red chilis, roasted tomatoes, garlic, cumin and coriander.
