Question: if i smoked a beef brisket for 3 hours (23 lb. brisket) then put into the refridgerator, rather than continuosly cooking. allowed it to sit overnight in refridgerator. then cooked for 13 + hours the next day. okay?

There should be no problem with this. You probably want to bring it to room temperature before putting it back in the next day.

Actually, that will give the connective tissue that has gelatinized time to re-form and improve the texture of the meat on the ribs. Shouldn't be a problem at all. Enjoy your meal!
