First, roll scoops of ice cream in plain breadcrumbs or crushed cereal flakes, then place the rolls on a cold baking sheet in the freezer for several hours. Deep fry them in a deep-fryer or 3 inches of oil for 1-2 minutes, long enough to cook the exterior without melting the interior; drain on a plate lined with paper towels and sprinkle with cinnamon and brown sugar.
