Mayonnaise is acidic, which inhibits the growth of microorganisms, so it actually has a very long shelf life. If the jar is unopened, it is safe to open and use if it is within a relatively short period of time, say a month or two. If opened, it should still keep for a few months past the date in the refrigerator.
