A chef's knife works well. A garlic press works great when you are in a hurry and you don't want to take the time to mince a garlic clove with a knife. If you don't have a garlic press, you can smash or crush a clove of garlic, by applying pressure using the flat side of your butcher knife. Once the garlic clove is crushed, remove the paper skin and discard. Then use a chef's knife to roughly chop through the garlic clove, chopping one direction and then the next.
