The first place I used to turn to for any kind of recipe is google. (I just googled "watercress salad," and came up with 207,000 hits.) One thing that I find helpful when I search this way is to read the reviews of the recipes--people give great feedback on what they've added more or less of, ingredients wise, and it's great to see the ratings.
Now, I follow a lot of vegan cooking blogs, so I search google reader first, because I know it will be a recipe from someone I trust.

Not sure I understand this question. Watercress is a somewhat bitter green with the taste of pepper. You can add it to any salad.
