A Pork Sirloin I have not tried till now, I will come with an answer after trying it.
Take equal parts of brown sugar,cilantro,black pepper,roasted garlic,onion powder,pepper blend and spread all over sirloin.
wrap in one layer of cheesecloth.
Arrange woods around hot coals.by firing these woods trning coals, create constant heating temperature.
After 12 hrs ,it converts into small sirloin when meat reaches to 190 degrees take out the meat and let sit for 30 min.
Cheese cloth formed a hard shell around the meat ,protecting it from excessive charring
Remove cheese cloth and serve.
