You should be able to just pick the leaves and lay them flay for drying. The leaves should freeze as well. You are best to use them fresh.
Note: there are edible and non-edible curry plants, you'll want to look up yours to make sure that it is the edible variety. Also I believe that while the berries may be edible, avoid the seeds- they're poisonous.
There should be several online sources that would have pictures of both varieties.
