Vinegar in a potato salad should taste like its source. Cider vinegar will be sharp and sour. Balsamic vinegar will be sweet and tangy. Red wine vinegar will be sharp and tasty. It all depends on what flavor of the mustard potato salad one is after which will drive a vinegar selection. One trick to soften the flavor of the vinegar and mustard in the potato salad is to add sugar and beer creating a sweet tart flavor. Try this by adding small amounts of sugar (1/4 teaspoon) and beer ( 1/4 cup) until the desired flavor is reached.
