Tomato water is pretty much just the liquid from a tomato.
To make it;
pan roast several tomatoes along with some herbs and spices-I use a combination of fresh ginger, basil, cardamom, garlic or shallots ect. Roast it in the pan until everything is fragrant.
Cool slightly and pour through a fine mesh sieve lined with cheesecloth, keeping the strained liquid and discarding the solids.
