Flank, usually called flank steak, comes from the upper hind leg of the cow. You could picture it as the very top of the outside of your thigh, at the front. Since cows use this muscle for walking, it tends to be a bit tough and requires longer cooking times than other "steak" cuts do. However, many people think it is more flavorful.
