Slice carrots as thin as possible on the bias into coins...julienne cut coins...dice juliennes into 1/8th inch or smaller pieces.

Slice cerery ribs into 4" pieces...julienne pieces as thin as possible...dice juliennes into 1/8th inch or smaller pieces.

Dice onion into the same 1/8th inch or smaller pieces.
