Cut the ends of the lemon off, so that you have a flat surface to work with. With a small, sharp knife, slice off the peel as thin as possible. Instead of using a knife, you can also use a sharp vegetable peeler, or run the lemon across a mandoline. If you still have some pith left, scrape it off with a knife.
