Savory Parmesan Cheese Choux Pastry

Ingredients

1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon Caraway
1/2 teaspoon sweet paprika
1/2 teaspoon mixed Italian herbs (optional)
1 tablespoon oil
3 tablespoons Parmesan cheese

Preparation

Preheat oven to 200 c. In a pot, bring water, margarine and spices to a boil. Pour in the matzo flour. Mix with a wooden spoon and lower the fire until combined. Remove from heat. In mixing bowl, mix the mixture for 2-3 min to cool down the dough.

Add the eggs one at a time and whisk in between. Add oil and Parmesan; mix well.

Fill a piping bag with mixture and pipe into the shape you desire. Bake until golden brown, about 10 minutes, then reduce temp. to 160 c and bake until light brown. Allow them to cool down in the oven for 15 minutes, then remove to cool on a cooling rack.

Cool before you fill them with a savory filling of your choice. They are tasty as it is without filling.

If you are looking for the non dairy version, replace the cheese with almond meal or matzo flour.
