Lamb With Lentils

Ingredients

2 tablespoons oil
1/2 pound stewing lamb, cut into bite-size pieces
1 small onion, chopped
2 clv garlic, chopped
1 couple of fresh sage, leaves, chopped or 1/2 tsp dried sage
3 tomato, chopped
1 19 oz tin brown lentils, drained, and, rinsed
2 cups water

Preparation

Preheat your oven to 375F.Heat an ovenproof pot over medium-high heat, add the oil.

Dust the lamb with flour, salt & pepper. Cook the lamb for 3 minutes, until it is browned on all sides.

Add the remaining ingredients to the pot, stir it all together and put it in the oven.

Let it cook, covered for 30 minutes, or until the lamb is tender and the lentils have absorbed most of the water.
