Borscht

Ingredients

1 tablespoon unsalted butter
1/2 cup sour cream or lowfat yogurt
1/2 cup chopped onions
1 clove garlic, finely minced
1/2 teaspoon thyme
1/2 teaspoon freshly ground black pepper
2 tablespoons red wine vinegar
1 can 16 oz. no salt or sugar added canned shoestring 3 cups water

Preparation

Melt butter in saucepan; add onions and garlic. Saute until tender, about 6 minutes.

Add bay leaf, thyme, pepper, vinegar, beets with their liquid and water. Bring to boil; reduce heat and simmer 45 minutes.

Stir in sour cream.

Serve hot or chilled.\

YUM! I love beets! Just a quick tip, top this with a fresh goat cheese and it will just be wonderful! I work with Chavrie and it's completely all natural and contains 30% less fat than sour cream. Besides, beets +goat cheese=Heaven!

Oooh, I've never tried it with goat cheese but that is a great suggestion! Beets and goat cheese compliment eat other wonderfully.
