Ingredients

3 tablespoons each of butter
flour (for thin, med., or thick sauce)
1 cup onion (as much as you prefer)
1 cup hot milk
Pinch of salt
nutmeg

Preparation

Melt butter and add onion. Saute onion in butter very gently until onion is soft and slightly golden. (This takes time, be patient!)

Stir flour into sauteed onion. Cook together for 3 minutes, stirring the whole time. Add milk and proceed the usual way, bringing milk to boil, keep stirring. Simmer gently to enhance and marry flavors if you have time. This can also be used as gravy!
