Stuffed Peppers With Beef and Couscous

Ingredients

For Stuffed Peppers:
1/4 pound lean ground beef (at least 90% lean)
Pinch salt
Pinch pepper
1 teaspoon ketchup
1 teaspoon dijon mustard
For Topping:
1 teaspoon ketchup
1/2 cup shredded cheese of your choice

Preparation

Preheat the oven to 350° Cut red pepper in half and vertically and remove seeds.

In a large bowl, mix all of the remaining ingredients with your hands. Divide meat mixture in half and stuff each in one of the bell pepper halves.

Brush the tops of the stuffed peppers with a mixture of 1 tsp ketchup and ¼ tsp Worcestershire sauce. Place peppers in a small baking dish and bake for 30 minutes.

Sprinkle with cheese if desired and bake for an additional 5 minutes.
