Pam's Cowboy Caviar

Preparation

Open, drain, and rinse all beans, adding to large bowl after rinsing.

Drain, rinse, and chop jalapenos, then add to bean mixture.

Chop onion, bell pepper, and tomatoes, then add to bean mixture.

Drain, rinse, and chop black olives, then add to bean mixture.

Add Italian dressing and toss.

Cover and chill for at least six hours before serving.

Serve with your favorite tortilla chips.

Our friend Pam from Dallas brought this to a dinner party many years ago when we were living in Beckley, WV. Brought back those cowboy memories. Texans make some of the world's best chefs, you know! This recipe delivers a kick, so make sure you thoroughly rinse the jalapeƱos unless you want steam coming out of your ears! I served this on top of baked nachos once, too, and they were gobbled up as fast as I could make them.
