Spicy Carrot and Orange Whoopie Pies

Ingredients

Ingredients for pies:
1 cup (200 g) cooked mashed carrots (just steam them and then mash them)
1/2 teaspoon (3 g) salt
1 teaspoon (5 g) cinnamon
1/4 teaspoon (2 g) ground cloves
1/4 teaspoon (2 g) nutmeg
Ingredients for Filling:
2 cups powdered sugar (icing sugar)
2 tablespoons (30 ml) orange juice
1 tablespoon grated orange peel

Preparation

Preheat the oven to 400F (220C)

In a mixing bowl, cream the butter and sugar.

Add the eggs one at a time and beat until fluffy.

In another bowl, mix all dry ingredients together.

Add the dry ingredients to the creamed mixture.

Using a large spoon, drop globs of the batter onto a large baking sheet covered in parchment paper. How big you make the globs depends on how large you want your cakies (er, whoopie pies).

Bake for about 10 minutes or until toothpick inserted in center of pies comes out dry. Let cool.

Directions for filling:

Cream the powdered sugar and butter together.

Add orange juice and peel and beat until smooth.

When the pies have cooled, sandwich the filling between two pies. Repeat. Repeat. Etcetera.

The whoopie pie craze has not yet hit Spain but I have heard vague rumblings about such things in recent months. Still, until I accidentally made them the other day, I'd never actually seen a whoopie pie. I thought I was making little cake sandwiches. I called them "cakies" which sounded slightly ridiculous but in retrospect, certainly no more ridiculous than "whoopie pie." Then I saw a picture of a whoopie pie and realized that my cakies were just that, except not quite so orderly or symmetrical. If I'd known, I would have tried to make them a bit more presentable as befitting their fashionable status.
