Game Day Bratwurst-Cabbage Soup

Ingredients

3 slices bacon, chopped
3 cloves garlic, finely chopped
1/2 teaspoon cumin
1/2 teaspoon caraway seeds
1/4 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1 cup potatoes, diced
1 cup potatoes, roughly chopped
1 cup parsnips, sliced
1 can Great Northern Beans, drained
1/2 head cabbage, sliced
2 bay leaves
1 pound fresh bratwurst, cooked and cut crosswise in ΒΌ" slices
Salt and pepper to taste

Preparation

In a standard stock pot, saute bacon over medium-high heat.

Once the fat has been rendered, add the onion and stir until tender.

Stir in the garlic, cumin, caraway seeds, cayenne pepper and red pepper flakes.

Add a generous splash of white wine to deglaze.

Stir in the tomato and allow to cook for 1 to 2 minutes before pouring in the vegetable stock.

Add the potatoes, parsnips, beans and cabbage.

Toss in 2 bay leaves, and bring to a boil

Allow soup to boil for approximately 5 minutes.

Add the bratwurst slices, and simmer with the lid on for 1 hour.

Remove bay leaves.

Salt and pepper to taste.
