Maple Peach Cookies

Ingredients

2 1/4 cups flour
1 teaspoon salt
1 1/4 sticks of soybutter, softened
1/4 cup brown sugar
1/4 cup white sugar
1/2 cup applesauce (look for one low in sugar)
1 tablespoon Maple Syrup
1 large peach, pitted and minced

In a small bowl mix the flour and salt. Set aside.

In a large bowl cream together the butter and sugar. Blend in the applesauce and then add the maple syrup, mixing well. Stir in the peaches adding as much juice as possible.

Spoon out the mixture onto lightly greased cookie sheets or onto sheets covered with parchment paper. Bake for 13-15 minutes. Once removed allow to cool on the sheets. Enjoy!

Great way to use peaches that are threatening to turn on you! To get as much juice as possible cut the peaches in a bowl.
If you don't have maple syrup you can substitute with Vanilla Extract or Vanilla Caviar if you are lucky enough to have some.
