Even Middle Eastern Food Can Be Vegan (Middle Eastern "Ground")

Ingredients

2 cups TVP (soaked in 2 ½ cups water)
2 tablespoons cumin
1 tablespoon coriander
1/8 teaspoon turmeric
1/2 teaspoon black pepper
1/2 tablespoon sumac
1 tablespoon Middle Eastern Seven Spices
1/2 tablespoon salt (or to taste)
3 tablespoons olive oil (or vegetable oil)
1 can baba ganoush dip
1 cup sliced almonds, toasted

Preparation

In a hot pan, add the TVP. Cook for 1-2 minutes, then add the mixed spices over top. Make sure you incorporate the spices very well into the TVP. Let cook for 5 minutes until the liquid has evaporated.

Add the lemon juice, garlic, and olive oil (made into a smoothie texture in the Magic Bullet or food processor). Stir in and mix very well.

Add the baba ganoush and mix it in very well.

Serve with rice and green salad. Sprinkle toasted almonds over top of the TVP dish and rice.
