Tuna Zucchini Cakes

Ingredients

1 cup shredded zucchini
1/4 cup chopped onion
1/2 teaspoon minced garlic
2 teaspoons butter
6 1/2 ounces can tuna, drained
1 egg
1 1/2 cups bread cubes (3 slices)
1/4 teaspoon salt, optional
1/4 teaspoon pepper

Preparation

Saute zucchini, onion and garlic in 1 teaspoon butter about 5 minutes; mix with remaining ingredients (except butter) until blended. Form into 6 patties and brown in skillet over medium heat (about 3 minutes per side). Serve with horseradish dip (mayonnaise with horseradish to taste).
