Lebanese Nachos

Ingredients

olive oil as needed
1 teaspoon cumin
1/2 teaspoon cinnamon and allspice
1 tablespoon of tahini
salt, to taste
1/4 cup of pine nuts
1 tablespoon of butter

Preparation

Drain chick peas and place in pot with 3 cups of water

Cook chick peas for one hour till water evaporates and they are soft.

Mash garlic with salt in a mortar

Add cumin to chick peas, olive oil, cinnamon and allspice and mash them a bit

Add garlic to the chick peas and taste to adjust seasoning

Mix tahini and garlic with yogurt

Cut pita in triangles and toast in 300F oven till golden 15 minutes

Melt butter in skillet and toast pine nuts till caramelized

When ready to serve, plop a tablespoon of mashed chick peas on pita triangles, add one tablespoon of yogurt and sprinkle pine nuts

About

This is a fusion of the popular Tex-Mex nachos with Lebanese traditional fatteh, a layered dish which consists of toasted pita croutons, garlicky yogurt and meat or legume stew, in this case, chick peas; it has all the fun and none of the fat of the Tex-Mex version.
