The abundance of green peas announce the coming of spring. These yummy, chubby pea pods are a powerhouse of vitamins and nutrients. They are rich in vitamins A, B-1, B-6, C and K which is good for the bones, and are a rich source of protein too! As they say, great things do come in small pods.

Physical Description

Peas are grown in pods and typically grow in a green oblong shaped shell. In most cases the shell as well as the peas are edible.

Selecting and Buying

Choosing: Look for pea pods that are green in color, fresh, and crisp. no wrinkling or bruising on the pod
Buying: You can buy green peas fresh, dried, canned or frozen. Frozen peas are preferable to canned peas because it contains less sodium and retains most of its freshness.

Preparation and Use

You can boil or steam them for 1-2 minutes. Avoid adding salt because it will toughen up the peas

Conserving and Storing

Peas are best eaten when freshly picked. But if you are not going to use them immediately, you can leave the peas in their pod and store in the fridge until ready to use. The longer the peas sit after they were harvested, the starchier they become

Social/Political

History: The green pea is thought to have come from Central Asia and Europe. The Chinese is known as one of the first to consume both seeds and pods as early as 2000 BC.
