Turkey Breast Roast With Roasted Root Vegetables

Ingredients

1 turkey breast roast wrapped with netting
2 garlic gloves
2 sprigs rosemary
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 garlic gloves minced
2 tablespoons chopped rosemary
1/4 teaspoon hot chili flakes

Preparation

Cut small slits into turkey breast and stuff with fig, prune, apricot, garlic and rosemary

In small bowl combine oil, lemon, honey, salt and pepper and brush over turkey breast

Place turkey in baking dish, covered with aluminum foil, and bake at 350° for 40 minutes or until cooked through. Baste every 15 minutes.

Vegetables

Clean, rinse and dry vegetables

Cut into 1 inch thick pieces

In large bowl combine oil and spices then mix in vegetables

Spread vegetables on parchment paper on baking sheet and drizzle with a little olive oil

Bake at 400° for 45 minutes or until vegetables are tender and browned. Stir 1-2 times during cooking.
