My summer is quickly coming to a close. In just a few weeks I'll be back at school and working and you have NO IDEA how sad that makes ...

stick unsalted butter |

cup honey |

cup packed brown sugar |

tablespoon fresh lemon juice |

teaspoon natural liquid smoke flavoring |

teaspoon crushed red pepper flakes |

center cut salmon fillet, about 2 lbs., skin on, in one piece |
Step 1 |
Combine butter, honey, brown sugar, lemon juice, liquid smoke and red pepper flakes in a saucepan. Cook over medium heat, stirring, until smooth, about 5-7 minutes. Cool to room temperature. |
Step 2 |
Arrange salmon on a dish large enough to hold it. |
Step 3 |
Pour cooled marinade over it, let stand 30 minutes, turning once. |
Step 4 |
Prepare hot coals for grilling. Oil grill well. Cook salmon, skin side up, over medium heat for 5-7 minutes. |
Step 5 |
Then turn it over and cook until the fish flakes easily, another 5-7 minutes |
