Yield: 6 servings

[edit] Ingredients

3

cups Vegetable or tomato juice

1

medium Onion, minced

2

medium Tomatoes, diced

1

Green bell pepper, minced

1

Garlic clove, crushed

1

medium Cucumber, diced

2

tablespoons Lemon juice

2

tablespoons Red wine vinegar

1

teaspoon Dried tarragon

1

teaspoon Minced fresh basil

1

pch Ground cumin

1

dsh Hot sauce

2

tablespoons Olive oil

Salt and pepper, to taste

Step 1

Combine all ingredients and chill for 2 hours.

Step 2

HINT: Out of time? Forget al the mincing and chopping. Cube the vegetables, then throw all of the ingredients into a blender or food processor and blend slowly until the vegetables are chunky and the soup is well blended.

Step 3

Preparation Time: 15-40 minutes

Step 4

Chilling Time: 2 hours
