All-In-One Potato Chicken Dish

The secret is in balancing all the flavors so they complement each other. It sounds so complicated but it is really easy if you just follow your taste buds.

- 3 boneless chicken breasts, cut into cubes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 5 medium potatoes, peeled and cut into wedgies
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground turmeric
- 1 jalapeno
- 1 onion
- 5 cloves garlic
- 1/2 cup water
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon parsley, finely chopped
Instructions
Step 1
Wash, dry, and cube the chicken. Season with salt and black pepper. Set aside.
Step 2
Peel and cut the potatoes into wedgies. Season with salt, black pepper, and turmeric. Set aside.
Step 3
Cut jalapeno, onions, and chop the garlic. Saute in a skillet with olive oil over medium heat for a few minutes.
Step 4
Turn heat to medium high. Add chicken and let it brown.
Step 5
Arrange the seasoned potatoes over the chicken, pour over water, cover, lower the heat to medium, and cook for 20 minutes.
Step 6
Turn the broiler on and transfer your skillet under the broiler for 5 - 8 minutes. Check the skillet after 5 minutes; if the potatoes are not browned enough, let the skillet under the broiler for 3 more minutes.
Step 7
Sprinkle the dish with 1 tablespoon fresh, finely chopped parsley and serve!
