Yield: 7 servings

8

ounces bacon, diced

1 ½

ounces shallot, minced

2

cloves garlic, mashed

4

ounces brown sugar

3

ounces cider vinegar

6

ounces vegetable oil

1

teaspoon salt, to taste

1

teaspoon black peppercorn, cracked

Step 1

Render the bacon. Remove the diced bacon from the pan and reserve. Add the shallots and garlic to the bacon fat and sweat. Blend in the brown sugar to melt. Whisk in the cider vinegar and then oil. Season to taste with salt and pepper. Bring to a simmer.

Serve in your favorite salad. Makes an excellent dressing for warm potato salad.
