Gorey's Pumpkin Potion

Ingredients

1 tablespoon butter
1/2 cup sweet onion, finely diced
1 small clove garlic, finely chopped
3 cups low sodium chicken stock or broth
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme

Preparation

In a small saucepot over medium-high heat, melt the butter and then add the onions.

Saute onions until tender and translucent.

Add garlic and saute until that is tender as well.

Pour in the stock or broth, stir to combine.

Add the pumpkin and stir to mix thoroughly.

When everything is combined, stir in the salt, pepper, thyme and nutmeg. Stir again.

Reduce heat to medium-low and simmer for 10 to 15 minutes.

Add cream and stir gently. Simmer another 5 minutes.

Taste to check salt level and add a pinch more if it needs it.

Serve plain, topped with croutons or sprinkled with a few toasted pumpkin seeds.

About

This is an easy, inexpensive and quick healthy soup.

It can also be made vegan/vegetarian by using vegetable broth in place of the chicken stock and omitting the cream (which could be replaced with soy milk or another, similar product).
