Summer Fig Salad

Ingredients

12 fresh figs, washed and quartered (but still attached)
1 tablespoon honey
2 ounces goat cheese
12 slices prosciutto
2 bunchs watercress, washed, tough stems removed
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard

Preparation

Preheat broiler to high.

Mix balsamic vinegar, mustard, a pinch of salt and same of pepper in a small bowl until salt dissolves. Whisk in oil. Set aside.

Arrange figs on a broiler proof sheet, drizzle with honey and place under broiler for 3 to 5 minutes.

Place a mound of watercress on each plate.

Twirl each slice of prosciutto into a circle and place a broiled fig on top, using 3 slices and figs per plate.. Divide goat cheese among the figs. Drizzle with the dressing and serve immediately.
