Sweet Potato Soup

Ingredients

1 medium onion
3 cups water
1/2 cup white wine
1 tablespoon curry powder
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1 cup water
salt and pepper to taste

Preparation

Peel and chop onion and sweet potatoes; Place in a saucepan with the water, bring to a boil, and cook until softened

Puree the vegetables and cooking water using a blender and return to saucepan (or use an immersion blender). Stir in chicken bouillon.

Over medium heat, add the wine, curry powder, nutmeg, cinnamon and salt and pepper. Add the coconut milk and water and bring to a gentle boil.
