Filo Tarts

Unwrap the filo pastry and cut some squares.

The most economical size will depend upon your type of filo, but approximately 3"/7.Scm square.

Re-cover the stack of filo pastry not being used in order to prevent drying out.

Brush melted butter on the first sheet of filo. Lay a second square on top at an angle to form a star shape, and brush with butter. Lay on a third quare, again at an -angle so that all 12 points are showing.

Lift and gently ease into a well-buttered muffin tin.

Allow to stand for a few minutes before removing each case to a cooling rack.

Fill as required.

Make these in small 40mm diameter bun/muffin tins.
