Spinach and Ginger Soup

Ingredients

6 ingredients for servings
(recipe adapted from: Madhur Jaffrey’s “Curry Easy”)
1 tablespoon oil
250 grams potatoes, peeled and diced
2 carrots, peeled and sliced
300 grams spinach, coarsely chopped
2 cloves
2 tablespoons cream or yogurt

Preparation

Heat the oil in a pot.

Add the onion and fry for a few minutes until they start to brown.Addd the potatoes dices. Stir well and reduce the heat to medium and cook for 5 minutes.

Add the vegetable stock and spices and bring to a boil. Add the carrots.

Simmer for 15 minutes.

Add the spinach and simmer for 10 more minutes.

Blend in a food processor until smooth. Check the seasoning, you might want to add some salt and pepper.

When serving the soup, pour some cream in each bowl and a few drops of lemon juice (the latter being optionnal)
