Grilled Bread With Zucchini, Ricotta, and Basil

Ingredients

4 slices country bread, ½-inch thick
2 tablespoons olive oil
4 smalls zucchini (about 2 pounds), thinly sliced lengthwise
1 cup fresh basil, leaves torn
1/4 teaspoon crushed red pepper
1/2 teaspoon kosher salt

Preparation

Heat grill to medium-high heat

Brush bread slices with 1 tablespoon of the olive oil and grill until golden and crisp, approximately 1 minute per side

Set bread aside on plates

Grill zucchini until tender and slightly charred, approximately 3 to 4 minutes per side

Toss the zucchini in a large bowl with the basil, crushed red pepper, salt, and remaining tablespoon of olive oil

Top the grilled bread slices with the zucchini mixture and ricotta cheese
