Eggs In Purgatory

Ingredients

1 tablespoon light olive oil
2 cloves of garlic diced
1 can of artichoke hearts, drained and quartered
Fresh basil or basil herb blend in the tube

Preparation

Heat olive oil in a large nonstick skillet on medium high heat.

Add diced garlic and cook until oil is flavored and garlic is just beginning to brown.

Remove garlic from pan.

Add artichoke hearts, olives and Italian seasoning and saute about 5 minutes.

Pour in pasta sauce and heat until just bubbly.

Make a well in the sauce and crack an egg into the well.

Repeat this process with the remaining three eggs.

Cover the pan and cook until the egg whites set.

Top with grated Parmesan.

Serve with basil.

About

I was very interested in making eggs in purgatory being I have been on a low-carb diet and a friend had suggested this as a good recipe to try. The recipe she sent though was just sauce and eggs and seemed kind of boring. I checked my cupboards and artichokes and olives sounded like and excellent addition.
